    250g cukru
    250g migdałów bez skórki
    3 jajka
    3 żółtka
    1 saszetka drożdży
    szczypta soli

    1. Ubić 2 jaja i żółtka z cukrem, po czym dodać mąkę, drożdże i szczyptę soli. Delikatnie opiec obrane ze skórki migdały, po czym przestudzić i dodać do ciasta.
    2. Z ciasta zrobić 3 wałki grubości na 3 palce i wysokości na 1 palec. Ułożyć na posmarowanej tłuszczem i oprószonej mąką blasze w pewnej odległości od siebie i posmarować ubitym jajkiem. Piec w średnio nagrzanym piekarniku przez około 15 minut.
    3. Wyjąć z piekarnika i nożem pokroić każdy wałek na plastry. Włożyć z powrotem do piekarnika na około 10 minut, aż będą chrupiące.
    4. Ciasteczka najlepiej podawać z dobrym toskańskim winem deserowym.
